How to use a Tromen wood-fired oven: beginner's guide

Do you want to start cooking with wood but don't know where to start? In this guide designed for beginners we show you step by step how to use a Tromen oven, from the first ignition to your first recipes.

How does a wood-fired oven work?


A wood-fired oven works on the principle of enveloping heat
. That is to say, the heat generated by the combustion of wood accumulates on the oven walls (thanks to its refractory materials) and then radiates evenly, enveloping the food.

This is different from direct fire, typical of a grill or campfire, where the food is in visual or physical contact with the flames.

This type of cooking allows for unique results: slow cooking, intense flavors and a texture that cannot be achieved with other types of ovens.

Guide to using a wood-fired oven

  1. Oven location

    Before you begin, it is essential to decide where you are going to install your Tromen oven. It can be indoors or outdoors, but the most important thing is that the space is well ventilated and has an adequate exhaust vent.

  2. What type of firewood is best

    We recommend using hard, dry firewood such as quebracho, carob or eucalyptus, as it burns evenly, lasts longer and generates stable embers. Wet or soft firewood can produce more smoke and residues. More info in our note on which firewood to use.

  3. Oven curing: the first ignition

    Before first use, perform an initial cleaning with a clean, dry cloth to remove dust from the interior.

    Then make a first ignition at medium heat for 30 to 40 minutes so that the oven reaches high temperature. It is normal for the paint to change color: the lacquer evaporates and chemical residues are removed.

    Do not place food during this stage. This process stabilizes the material and prepares the oven for proper cooking.

  4. Preheating the oven

    Before cooking, preheat the oven for 45 minutes to 1 hour so that the heat is evenly distributed.

    You can control the temperature with the built-in thermometer in all our models.

Cleaning after each use

Once the oven cools down, remove the ashes with a metalGrill Shovel , one of those used for the grill. If food remains, you can use a non-abrasive brush to avoid scratching the interior.

Do not use chemical products or excessive water: heat takes care of sanitizing naturally.

Tips for prolonging service life

  • Use only suitable firewood. Avoid damp or resinous firewood (such as pine).
  • Do not overload the oven with unnecessary fire.
  • Avoid hitting or scratching the interior with metal utensils.
  • Do not accumulate ashes or food leftovers.
  • If the oven is outdoors, protect it with a cover to prevent damage from rain, sun or humidity.
